Cannabis and Chocolate Banana Marble Loaf

2020 was the year of banana bread. Once you’ve got the basic recipe down, why not elevate it to another level? This recipe uses cannabutter to enhance the banana bread experience.

Prep time: 45 mins

Baking time: 1 hour

NB: The strength of this cake will depend on the potency of your cannabutter so use these measurements as a guide only.

What you will need

  • One loaf tin (approx 8×5)
  • 80g cannabutter
  • 80g unsalted butter
  • 2 large eggs
  • 3 large ripe bananas
  • 160g self raising flour
  • 2 dessert-spoons of cocoa powder
  • 160g sugar
  • 2 tablespoons of natural set yoghurt.

To decorate (optional):

  • 2 bars of god quality chocolate (melted)

  • Pre-heat oven to 200 degrees C.
  • Grease your loaf tin with butter/ oil (if you have a silicon tin, skip this step).
  • In a mixing bowl, mix together the butter, cannabutter, eggs and sugar until smooth.
  • Add in the flour and stir.
  • Add two tablespoons of natural set yoghurt.
  • In a separate bowl, mash your bananas and then add to the cake batter.
  • Pour half the cake batter into a separate bowl and add the cocoa powder. Stir well.
  • Using a serving spoon dollop one scoop of the plain cake batter into a corner of your loaf tin. Then add a dollop of chocolate batter next to it and repeat alternating cake mixes and layer them until you’ve used all the cake mix. I usually get three layers of alternating batters but this will depend on the size of your loaf tin.
  • Using a butter knife or skewer, gently swirl the batter. Don’t get carried away or all the batter will merge together and you’ll lose the marble effect.
  • Bake in a pre-heated oven  for 1 hour. Stick a butter knife in the centre of the loaf, if it comes out clean, it’s done.

To decorate:

  • Melt a bar of good quality chocolate in a bain marie with a knob of butter (this means the chocolate won’t set too hard on your cake).
  • Once your cake is completely cool, spread the chocolate on your cake with a spatula. If you’re impatient and do this while the cake is still warm the chocolate will slide off faster than Usain Bolt can run the 100 metres.
